4 Quick and Healthy Meals even the pickiest eaters will love

I am not afraid to admit that cooking dinner is NOT my favorite thing.
Anyone else?

And how about when you go through the hassle of cooking an entire meal, only to have your family not love it??
​​​​How do you cook dinner and make the whole family happy?
What do you make that they will actually eat AND that is quick, easy and healthy?
As a mom of 3 boys, including one of the pickiest eaters ever, this is a daily struggle for me.
So, I wanted to share 4 of my go to meals that everyone loves and are easy, quick and healthy too!


1. Asian night


As a vegetarian I love a big stir-fry. Of course, it's not my kids favorite. But when I pair it with other great sides, this meal has something for everyone. I start with Trader Joe's Asian Vegetables with Bejing Style Soy Sauce. The sauce is delicious and this is a great base. I prefer to add more vegetables, such as broccoli and carrots or whatever I have available. Next I sauté shrimp (you can also do chicken, tofu or steak depending on what your family likes). Then I make Trader Joes Riced Cauliflower Stir Fry which is delicious and a great way to get more veggies into your kids without them even knowing it. This is my favorite riced cauliflower ever! My kids love dumplings and the Trader Joe's pork Gyoza is one of their favorites, and goes perfectly with this meal. I also love the Whole Foods vegetable pot stickers. And lastly, since I have three growing boys who need extra calories, I make them Peanut noodles. This is not low calorie but is delicious and so easy and my kids can’t get enough of them!.
Voila! A stir fry, riced cauliflower, dumplings and peanut noodles. Everyone loves this meal and there are always leftovers for the next day too!


2. Mexican night


Mexican Monday, Taco Tuesday, Fajita Friday......we do them all. Mexican night is the clear winner for my family’s favorite. And I always make enough so it serves us for at least 2 nights (#bonus). We typically stick with Tacos to start so I use 99% lean ground turkey and just add some taco seasoning and they're done. Next I always make my Mexican Egg Casserole which is a HUGE hit with everyone, is high in protein, low in calories and even makes a great breakfast for leftovers. I typically open a can of organic refried beans and just heat them up and they go great in the tacos. For a vegetable our favorite is my Buffalo Style Cauliflower. Most buffalo cauliflower is fried but this one is super healthy and So delicious. And it gets even better every time to reheat it in the oven! Add a Mexican style rice and dinner is served!


3. Turkey Burgers


These turkey burgers have always been a huge hit with my family and every guest I have ever served them to. They are made with 99% ground turkey, are never dry and are bursting with flavor. I serve these with Trader Joe's Root Vegetable Fries and Green Beans Almondine for a quick easy and healthy meal that everyone loves.


4. Chicken

Chicken is our go to for most dinners. But figuring out how to vary chicken so it doesn't get boring is a challenge. Here I will share a few family favorites. First is the Trader Joe's Genovese Pesto Chicken. Simply open the package and saute it until cooked and you are done. My kids also love this Lemon Chicken which is full of flavor and super easy! General Tso's Chicken in my crock pot is one of the easiest and most liked chicken dishes for my whole family. All of these simply get served with a starch (brown rice, sweet potatoes, couscous, etc) and a vegetable for a balanced and healthy meal.
