Southwest Egg White Omelet

A quick and healthy breakfast that is loaded with protein and sure to fill you for hours!

Ingredients:

1 tsp olive oil

1 slice deli ham, chopped

1/2 bell pepper, chopped

1/2 small onion, chopped

1/2 cup spinach, chopped

3 egg whites

1/4 cup low fat cheddar or jack cheese, shredded

Directions:

Heat oil in a pan over medium high heat.

Cook the ham, peppers, onions, and spinach until peppers and onions are tender.

Transer to. bowl.

Whisk the 3 egg whites and pour into the pan, swirling around to make a full circle.

Lower to a medium heat.

Cook for about 15 seconds, then spoon the veggie and mixture on top, followed by the cheese.

Cook until edges are not liquid.

Fold one half of the omelet over the other and cook until desired doneness.
