Soy Ginger Tilapia
If you like cilantro you will like this fish. You can use any white fish of your choosing and it will come out great!
Serve over rice, with a vegetable and you have a healthy, balanced meal.
Ingredeitns
1 pound fresh or frozen Tilapia (or other white fish of choice)
1 bunch of cilantro, chopped
1⁄2 jalapeno, chopped
1 tsp grated fresh ginger
1 garlic clove, crushed
2 limes, juiced
1⁄2 cup low sodium soy sauce
1⁄4 cup olive oil
Pinch of sugar
Salt and pepper, to taste
DIRECTIONS
Preheat oven to 350 degrees.
Combine chopped cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, oil, sugar and salt and pepper.
Pour half of sauce into the bottom of a 9 x 13 baking dish.
Add thawed (or fresh) fish and top with remaining sauce.
Bake for 20 minutes or until fish flakes with fork.
Makes 4 servings. (3 ounces cooked each)
