Citrus Kale Salad

This refreshing salad is easy, fresh and delicious.

2 lbs fresh kale, cut up

1 cup dried craisins of dried cherries

3 oranges

1/4 cup rice vinegar

1/4 cup honey

1 tbsp olive oil

Place craisins in a bowl and mix with the juice of 2 fresh oranges. Let soak until craisins plump up.

Rip up the kale and place in a very large bowl (I like to use a Tupperware with a lid).

Make dressing by combining rice vinegar, honey and oil. Pour on top of kale. Cup up one orange into small pieces, add to the kale and top with the craisins. Shake it all up together and let sit in the refrigerator. The kale will soften as it sits.
