Crock Pot General Tso's Chicken

A super easy and delicious chicken dish that the whole family will love!

Serve with brown rice and broccoli for a perfect meal.


2 lbs boneless, skinless chicken breasts, but into pieces

1/2 cup cornstarch
1 tsp salt
1⁄2 tsp pepper
2 Tablespoons Sesame Oil 

1⁄3 cup sugar

1⁄2 cup low sodium soy sauce 

1⁄2 cup fresh pineapple juice

1/3 cup apple cider vinegar

4 cloves garlic, minced

1⁄2 tsp cayenne pepper
1⁄4 tsp dried ginger

Green onions, chopped to top
Rice and Broccoli to serve

(note: you can adjust sugar and chili pepper to desired sweetness and spiciness)

DIRECTIONS

Combine cornstarch, salt and pepper in a shallow bowl. Dip chicken pieces in mixture to coat. Heat 2 tbsp sesame oil in skillet over medium high heat. Brown chicken pieces (should only take a couple minutes) In the Crock Pot, combine sugar, soy sauce, pineapple juice, vinegar, ginger, garlic and cayenne. Stir to mix well. Add chicken to crock pot and cook on low for 4 hours. Stir occasionally.

Serve with broccoli over rice.
