Balsamic Roasted Asparagus Salad

This is one of the most flavorful salads you will ever eat! Packed with nutrients and tastes better as it sits.

Serve with grilled chicken and rice for a perfect meal.


2 bunches of asparagus (approximately 2 pounds)

1 red bell pepper

1 yellow bell pepper

1 orange bell pepper

1 medium red onion

1 pint cherry tomatoes


Balsamic Vinaigrette:

1/2 cup balsamic vinegar

1 Tbsp olive oil

2 tsp honey

1 Tbsp dijon mustard

3 cloves garlic, minced

salt/pepper to taste

Place asparagus on a baking sheet with a drizzle of olive oi, salt and pepper.

Wash and slice peppers, onions and tomatoes. Place on baking sheet with drizzle of olive oil, salt and pepper.

Roast all vegetables at 400 degrees until tender (about 10-15 minutes)

Place all roasted vegetables in a large bowl and drizzle with balsamic vinaigrette.

Serve warm or cold.
