Delicious Low-fat Vegan Apple Cake

You will never know this cake is vegan and low-fat!

This moist, delicious cake makes a great dessert that won’t derail your diet and is sure to please.

3 cups all-purpose flour

2 cups white sugar

1 teaspoon salt

1 teaspoon baking soda

1 cup applesauce

¼ cup avocado oil

2 teaspoons vanilla extract

1 1/2 Tbsp Ener-G egg replacer mixed with 6 Tbsp water

3 ½ cups apples, peeled and chopped

Glaze:

1 cup sifted confectioner's sugar

1-2 tablespoons almond milk

1/2 to 1 teaspoon vanilla extract

Preheat oven to 350 degrees

Spray and flour a 9x13-inch pan.

In a large bowl, sift together flour, sugar, salt, and baking soda. Make a well in the center and add applesauce, oil, mixed egg substitute, and vanilla. Mix well (batter will be thick). Fold in chopped apples. Spread batter into prepared pan. Bake for 40-50 minutes or until fully cooked.

While cake is cooking, prepare the glaze.

Sift powdered sugar, add vanilla and slowly add almond milk until desired consistency.

Top hot cake with glaze.
