Vegan Rollout Sugar Cookies
We all know that cookies aren’t “healthy”, but they are a treat that we all love from time to time.
I don’t believe in “bad” foods. I believe in better choices.
I also believe that there is room for everything in our diets.
The minute we are told that we can’t have something, we will naturally want it more.
That is why when I work with my cleints I teach them how to fit everything they love into their diets and STILL lose weight. These vegan roll-out sugar cookies are always a hit and a must have during the holiday season.
Ingredients:
1 cup Earth Balance vegan butter, softened
1 cup sugar
1⁄2 Tbsp Ener-g egg replacer plus 2 Tbsp water (mix together)
1 Tbsp vanilla
2 1⁄2 cups all-purpose flour 1 tsp baking powder
2 Tbsp orange juice
Frosting:
1 lb confectioner sugar
1⁄2 cup earth balance vegan butter 1 tsp vanilla
3 Tbsp almond milk
Pre-heat over 400 degrees.
Combine butter, sugar and mixed egg substitute in large mixing bowl.
Add flour, baking powder and mix well.
Divide dough into 3 and wrap each in saran wrap and refrigerate for 2-3 hours.
Removed from refrigerator, one at a time, and roll out with rolling pin and cut with cookie cutters.
Bake for 6-10 minutes.
Once cooled, frost and decorate.
