Vegan and Gluten free Chocolate Peanut Butter bombs
If you like chocolate and peanut butter then these Cookes are a MUST try indulgence!
I make these every Christmas and they are always a hit!
They are super easy to make, vegan and gluten free so perfect to serve to anyone with a dairy or gluten allergy.
3 cups Rice Crispies cereal
1/2 cup earth balance vegan butter, softened
1 cup creamy Peanut Butter
3/4 pound of confectioners sugar
10 ounces Enjoy Life vegan chocolate chips
In a large bowl, mix together the Rice Crispies, butter, peanut butter and confectioners sugar.
Roll into small balls and place on a baking sheet lined with parchment paper.
Freeze for 30 minutes.
On the stovetop melt the chocolate chips in a saucepan (you can add a tsp of vegetable oil for a smoother consistency). Remove the cookie balls from the freezer and dip into the melted chocolate, being sure to cover them entirely. Place them back on a baking sheet with lined parchment paper after they are dipped in the chocolate. Return to the freezer and chill until the chocolate is hardened.
