Kale and Sausage Soup

This hearty and delicious soup is packed with vitamins and nutrients and is a perfect meal for the whole family.

1 Tbsp olive oil
1 medium onion, chopped 

4 large carrots, chopped
2 stalks celery, chopped
3 cloves garlic
2 cans kidney bean (15 oz each)
2 cans chopped tomatoes (15 oz each)
2 large sweet potatoes, chopped 

10 cups chopped kale

4 cups vegetable broth

4 links chicken sausage

DIRECTIONS

In a large pot, saute garlic in olive oil until golden brown. Add in onions and saute until translucent. Add in carrots, celery, beans, tomatoes, sweet potatoes, kale and broth. Mix and simmer.

While soup is simmering, cut up the sausage and brown in a pan.

Add the cooked sausage to the soup and season to taste with salt and pepper.

Makes 12 servings.
