Thai Cilantro Salad
This healthy Thai-inspired salad is quick and easy to make and is bursting with flavor.
INGREDIENTS
24 ounces of slaw mix (shredded cabbage, shredded carrots, shredded Brussel sprouts ...whichever you prefer)
2 large cucumbers, chopped
12 ounces edamame, shelled
2 large bunches of cilantro
4 fresh limes
2 tsp stevia (can substitute sugar if you prefer)
1 Tbsp hot chili oil
1⁄4 cup olive oil
Salt, pepper
DIRECTIONS
Combine shredded slaw mixes, chopped cucumbers, and edamame in a large bowl.
Clean and de-sprig the cilantro.
Grate the zest of 2 limes and juice 4 limes.
Place in a food processor or high-powered blender. Add cilantro. Start blending and slowly add the hot chili oil and olive oil.
Add salt and pepper to taste.
Pour dressing from food processor over slaw mix and combine well.
