Fresh Corn Salad

This quick and easy salad combines the best, fresh, summer flavors into one delicious side dish!

Top with grilled chicken or shrimp for a complete meal.

Ingredients:

6 ears of corn

1 cup chopped grape or cherry tomatoes

1/2 cup chopped red onion

1/3 cup chopped fresh basil (or more to taste)

3 Tbsp white balsamic vinegar

2 tsp olive oil

salt and pepper to taste

Directions:

Remove husks and cut corn off of the cob.

Heat 1 tsp olive oil in a skillet and saute red onions until starting to become translucent.

Add corn and saute for a few minutes to remove starchiness.

Set aside to cool.

Add tomatoes and basil.

Whisk together 3 Tbsp vinegar, remaining tsp of olive oil, salt and pepper.

Pour over corn mixture, toss together and let sit until ready to serve.

Makes 8 servings (3/4 cup each)
