Spicy Shrimp Bites

These spicy shrimp bites are quick, easy and delicious.

They are high in protein and low in calories.

Serve as an appetizer or even with a vegetable for a balanced lunch.

Ingredients:

4 egg roll wrappers

3/4 cup part skim ricotta cheese

1 1/4 tsp Calabrese peperoncino

1/4 tsp salt

1/4 tsp dried oregano

1/4 tsp dried basil

2 Tbsp marinara sauce

12 shrimp, cleaned with tails off

Olive oil spray

Directions:
Preheat oven to 400 degrees.

Spray a mini muffin tin with olive oil to prevent sticking. Cut the 3 egg roll wrappers into 4 equal pieces (leaving you with 12 squares). Press one square into each cup of a mini muffin tin.

Mix together ricotta, chilis, oregano, salt and basil.

Place a scoop of mixture into each wrapper in the muffin tin. Top each with 1/2 tsp marina sauce.

Press one shrimp into each cup.

Bake for 18 minutes.
