Healthy Turkey Skillet
This one skillet dish is so easy to make, healthy, delicious and something the whole family will love.
It’s a full meal in one but you can also add a vegetable and grain, if you choose.
And the leftovers make for a perfect lunch.
Ingredients:
1 pound 99% lean ground turkey
1 medium zucchini, chopped
1/4 cup chopped onion
2 cloves garlic
2 Tbsp tomato paste
3/4 cup canned beans, rinsed (I’ve used kidney, black and garbanzo and all work well)
3/4 cup canned corn, drained
1 small tomato, diced
1 jalapeno, diced
2 tsp cumin (or more to taste)
2 tsp salt (or more to taste)
1/4 cup fresh cilantro, chopped
Directions:
Spray a non stick pan with oil and wipe off excess.
Add chopped onions and garlic to the pan and sautee for a few minutes.
Add raw ground turkey and cook through (about 5 minutes) Season with cumin and salt.
Add zucchini, tomato paste, chopped tomato, beans, corn and jalapeno. Mix and cook on low for a few minutes. Add fresh cilantro and season with more cumin and salt to taste (if needed)
Makes 4 servings (about 1 1/2 cups each)
