Chicken Sausage and Vegetable Sheet Pan Meal

This chicken sausage dinner is so quick, easy and delicious!

Packed wtih protein and nutrients, eating healthy doesn’t get easier than this one sheet meal.

Ingredients:

20 ounces butternut squash, cubed

16 ounces brussel sprouts, trimmed and halved

4 links chicken sausage (I like Trader Joe’s chicken apple)

Avocado or Olive Oil Spray

1 tsp salt (I like pink himalayan)

1 tsp garlic powder

1/2 tsp black pepper

Option Sauce:

1/2 cup plain greek yogurt (for vegan version use Kite hill high protein plain greek yogurt)

1 cup chopped cilantro

1-2 Tbsp lime juice

1 roasted jalapeño

1 garlic clive

2-3 Tbsp water or vegetable broth (for desired consistency)

Salt to taste

Directions:

Preheat oven to 400 degrees.

Add chopped brussel sprouts and butternut squash to a large bowl. Spray quickly with oil. Season with salt, pepper and garlic powder and mix to coat vegetables. Transer for large baking sheet and bake for 20 minutes, flipping half way.

Cut up chicken sausage into bit size pieces. Add to the baking sheet and return to oven for 15-20 minutes.

In the meantime, you can prepare the sauce. Place the jalapeno in the oven and remove the skin.

In a blender, combine yogurt, lime juice, cilantro, chopped roasted jalapeno, garlic and salt. Add water (or broth) as needed.

Serve chicken and vegetables with a drizzle of sauce. Can also serve over a grain such a quinoa.
