Chickpea Salad

Ingredients:
2 - 15 oz cans Chick Peas, rinsed and drained

1/2 cup shredded Carrot

1/2 cup chopped Red onion

1/2 large Cucumber, chopped

1/2 cup chopped Peppers (preferably red, orange or yellow)

1/4 cup chopped Basil, chopped

1/2 tsp dijon mustard

1 clove garlic, minced

4 Tbsp lemon juice

2 tsp olive oil

salt and pepper

Directions:

Drain and rinse the chickpeas before placing into a large bowl.

Add shredded carrots, chopped cucumber, chopped red onion, chopped bell peppers, and chopped basil.

In a small cup or bowl combine lemon juice, dijon mustard, olive oil, garlic, salt, and pepper.

Whisk until well combined.

Drizzle the dressing over the salad and gently toss until all the beans and veggies are coated in the seasoning. Add salt and pepper to taste.

Adjust seasonings and enjoy!
