Summer Pasta Salad with Greens

This easy pasta salad is lighter and higher in protein than your average pasta salad but bursting with flavor. The perfect addition to any grilled meat.


Ingredients:

8 ounces Banza pasta

3 cups arugula

2 cups fresh spinach

1/2 cup sun-dried tomatoes (NOT oil packed)

1 Tbsp Olive Oil

2 Tbsp Balsamic vinegar


Directions:

Cook pasta in salted water according to package directions. When done, drain and rinse under cold water.

In a large bowl, combine the pasta, greens, sun dried tomatoes, olive oil, vinegar, salt and pepper. Toss well then just before serving top with fresh shaved parmesan.
