Shrimp Fajita Bowl
These bowls are delicious, healthy, and so versatile.
You can serve with rice or riced cauliflower, your favorite beans, salsa, and guac. It’s super easy and your whole family will love making their own bowls.
Ingredients:
16 ounces shrimp
1/2 tsp salt
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp oregano
1/2 tsp paprika
1 tsp olive oil
2 bell peppers, sliced julienne (red, orange and/or yellow)
1 medium onion, sliced
juice of 1 lime
Directions:
In a large bowl, whisk together the spices (cumin, oregano, paprika, salt, garlic, onion powder and pepper). Add the raw shrimp and toss to evenly coat. Juice one lime on shrimp.
Set aside and allow to marinate while you make the veggies.
For veggies: Slice and place all veggies on a cooking sheet. Roast 20 minutes or to desired tenderness, tossing halfway through.
Saute shrimp in a hot pan with 1 tsp of oil.
Serve with Rice, black beans, salsa and guac
