Shrimp Fajita Bowl

These bowls are delicious, healthy and so versatile.

You can serve with rice or riced cauliflower, your favorite beans, salsa and guac. It’s super easy and your whole family will love making their own bowls.

Ingredients:

16 ounces shrimp

1/2 tsp salt

1 tsp cumin

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp oregano

1/2 tsp paprika

1 tsp olive oil

2 bell peppers, sliced julienne (red, orange and or yellow)

1 medium onion, sliced

juice of 1 lime

Directions:

In a large bowl, whisk together the shrimp ingredients (cumin, oregano, paprika, salt, garlic, onion powder and pepper). Add the shrimp and toss to evenly coat. Juice one lime on shrimp.

Set aside and allow to marinate while you make the veggies.

For veggies: Combine all veggie ingredients in a large bowl. Use your hands to toss and evenly coat veggies with oil and seasoning. Transfer to a sheet pan and roast 20 minutes, tossing halfway through.

Serve with Rice, black beans, salsa and guac
