Beet and Green Bean Salad
This easy, healthy salad is perfect for a summer day. Just add protein and enjoy!
Ingredients:
12 ounces green beans
16 ounces beets (boiled and drained, or canned)
10 cups spring mix lettuce
Dressing:
4 Tbsp Balsamic vinegar
2 Tbsp Dijon mustard
1 Tbsp honey
1 tsp olive oil
Directions:
Bring salted water to a boil in a pot and blanch green beans to desired tenderness.
Drain and let cool.
Prepare dressing by adding ingredients and salt and pepper to taste.
In a large bowl combine greens, green beans and beets. Toss with dressing and serve.
Makes 6 servings (about 2 cups per serving)
