Israeli Couscous Salad with Apples, Craisins, and Herbs

This easy salad is the perfect blend of sweet, tart and flavorful. It’s the perfect side dish for any meal.

Ingredients:

2 cups Israeli Couscous, dry

4 cups vegetable broth

1/4 cup fresh parsley, chopped

1 1/2 Tbsp fresh rosemary, chopped

1 tsp fresh thyme, chopped

1 medium green apple, diced

1 cup craisins

1/4 cup slivered almonds

Dressing:

1/4 cup apple cider vinegar

2 Tbsp maple syrup

1 Tbsp olive oil

1 Tbsp Kosher salt

pepper

Directions:

Cook couscous in broth and set aside to cool.

Add chopped herbs, apples, craisins, and almonds.

Make vinagrette and pour over salad. Mix well and serve

Makes about 6 cups. One serving is 1/2 cup
