Shrimp Scampi

This Healthy shrimp scampi uses vegetable broth in place of olive oil to save nearly 900 calories!

It also calls for Chickpea past to bump up the protein and fiber.

Ingredients

8 ounces Banza Pasta

1 pound raw shrimp

1 Tbsp olive oil

4 cloves garlic, minced

1 cup vegetable broth

Cook pasta according to package. Drain and set aside.

In a large saucepan, saute olive oil. Add garlic and saute. Add about half the broth.

Place raw shrimp in the pan and saute until cooked.

Add the pasta and as much broth as you need for desired moisture.

Season with salt, pepper and parsley and toss all together.

Makes 4 servings.
