Vegan Black Bean Burgers
You do no have to be vegan or vegetarian to enjoy these healthy and delicious homemade black bean burgers! I love to serve mine on 2 slices of Dave’s killer thin sliced bread for 14 grams of protein and 14 grams of fiber!
Ingredients:
3 cans black beans, rinsed and drained (about 4.5 cups)
4 Tbsp Ener-G egg replacer
1 cup water
1 small onion, chopped
2 tsp garlic powder
1 cup panko (or regular) breadcrumbs
1 Tbsp ground cumin
1 Tbsp Tony Chachere’s seasoning (or can use salt)
1/2 cup fresh cilantro, chopped
Directions:
Mix egg replacer with water and set aside to thicken (you can also use 4 whole eggs if you don’t want vegan burgers)
Rinse and drain 3 cans of black beans (about 4.5 cups.
Place beans a large bowl and mash to desired consistency (some like chunks of whole beans)
Add bread crumbs, garlic powder, chopped onion, cumin and Tony Checheries (or can use salt)
Add chopped cilantro
Form into 9 patties.
(I use a 1/2 cup measuring cup to scoop out the mixture and form into the perfect size burger)
Bake at 400 degrees for about 8 minutes then flip and continue cooking until desired doneness. (about 5 more minutes)
Makes 9 burgers
