Coconut Curry Chicken
This easy chicken dish is moist, healthy, and delicious!
Serve with rice or riced cauliflower and a green vegetable for a perfectly balanced meal.
Ingredients:
2 lbs boneless, skinless chicken breasts
1 tsp Paprika
1 tsp dried oregano
1/2 cup onions, chopped
3 cloves garlic, minced
1/2 Tbsp ground ginger
1/4 cup chicken broth
1 Tbsp tomato paste
1.5 cups coconut milk
1 tsp salt
1/4 cup cilantro, chopped
Directions:
Season the chicken with salt, paprika and oregano.
Preheat a large non-stick skillet over high and quickly spray with oil then brown the chicken in an even layer, 3-5 minutes.
Once browned, remove the chicken, reduce heat. Add the onion, garlic, ginger, and cook 1 minute, then add the broth to deglaze the pan.
Simmer about 1 minute then add in the tomato paste, coconut milk, and 1/2 teaspoon salt.
Bring the sauce to a simmer for a few minutes to thicken, add the chicken back along with any juices and cook on medium heat 3 to 4 minutes, or until fully cooked..
Garnish with cilantro
Makes 4 servings (about 5 ounces cooked chicken each)
