One pan Shimp with Tomatoes and Corn

This dish could not be easier with just one pan and a few ingredients that you likely have on hand!

Not to mention it’s healthy and delicious!


Ingredients:

1 lb shrimp, thawed, deveined with tails off
1 pint cherry tomatoes

2 tsp olive oil

1 tsp salt (more to season to taste after if needed)

1 tsp old bay seasoning

1 tsp dried basil

4 cloves garlic

1 can sweet corn, drained

Fresh basil for garnish


Place shrimp and tomatoes in a large bowl together and season with olive oil, salt, Old Bay seasoning, dried basil and garlic.
Toss all together.
Place on a nonstick sheet pan and bake at 400 degrees for about 7 minutes.
Remove from the oven and add one can of drained sweet corn.
Broil for another 5 minutes or until the tomatoes are bursting and shrimp is desired tenderness.

Salt to taste, if needed and top with fresh chopped basil.
