Summer Protein Pasta Salad

This quick and easy high protein pasta salad makes the perfect Sumer side dish. Customize with your favorite veggies or what you have on hand for the quickest meal in minutes.

Ingredients:

8 ounce package of Chickpea pasta

1/2 cup cucumbers, chopped

1/2 cup cherry tomatoes, chopped

1/2 cup carrots, shredded

Dressing:

1/3 cup white balsamic vinegar

1 tsp lemon juice

1 Tbsp dijon mustard

1 clove garlic, crushed

1 tsp dried Italian seasonings (or more to taste)

salt to taste

Cook pasta according to package.

Chop cucumbers, tomatoes and shred carrots. Add veggies to cooked and drained pasta.

For dressing, mix white balsamic vinegar, lemon juice, dijon mustard, garlic, Italian seasoning and salt to taste.

Mix all together and enjoy!

Makes about 8 servings, 3/4 cup each
